Shiitake Mushroom Stir-Fry

Ingredients:

  • 200g fresh shiitake mushrooms, sliced
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • Fresh ginger, a 1-inch piece, grated
  • Salt and pepper to taste
  • Optional: sliced chicken breast or tofu for protein

Instructions:

  1. Heat the sesame oil in a large pan or wok over medium-high heat.
  2. Add the garlic and ginger, sautéing until fragrant.
  3. Increase the heat to high and add the chicken or tofu (if using). Cook until browned.
  4. Add the mushrooms and onions, stirring frequently until they start to soften.
  5. Add the bell peppers and continue to stir-fry for another 2-3 minutes.
  6. Stir in the soy sauce and oyster sauce, and season with salt and pepper.
  7. Cook for another minute or two until everything is well combined and heated through.
  8. Serve hot with rice or noodles.
